PISKA KORÁ - Red Snapper

Ingredients

5 lb red snapper, pollock, cod or halibut
2 medium onions, chopped
1 ½ cup chopped green pepper
1 cup chopped celery
1 bunch spring onions, chopped
2 tablespoon of butter
12 oz tomatoes
6 oz tomato paste
2 cloves garlic, minced
2 bay leaves, crumbled
1 teaspoon of salt
¼ teaspoon pepper
1 heaped teaspoon oregano
- Cajun seasoning to taste
1½ cup dry white wine

 

Method

  1. - Preheat the oven to 350°F / 180°C.
  2. - Lightly brush a broiler pan with cooking oil.
  3. Place fillets on greased pan and bake in a 350°F / 180°C oven for 20 minutes.
  4. Saute onion, spring onions, green pepper, garlic, crumbled bay leaves and celery in butter.
  5. Add tomatoes, tomato paste and the rest of the seasonings except the wine; simmer for about 20 minutes.
  6. Add wine to sauce, pour over fillets -let it spill around the sides of the fish- and return to oven for an additional 10 minutes until fish flakes easily.
